Hey everyone! This is a blog where I will post my family's "paleo" meals. The paleo diet is garden vegetables (especially greens), lean meats, little starch, nuts and seeds, and no sugar.
We really like this diet and it makes us feel great! My sisters sometimes ask when we're going to be done eating like this, and somone responds by saying that we're never going to stop eating like this as a lifestyle. Although sometimes (it's probably more than sometimes) we don't follow it as strictly as we should. We like sweets!! Happy reading!

Sunday dinner
Wow! I haven't posted in a long time! Tonight for dinner we had, chicken breasts, fresh green salad, golden ucon potatoes, and corn on the cob. It was pretty good! I can't remember but I'm pretty sure that paleo doesn't allow corn. I, for one, think corn is totally fine!! Its a vegetable. I don't think its nessacary to eat TOTALLY paleo. Some of the things they ban, like corn, is not that bad at all.

Paleo Dinner (finally)
For dinner tonight we had, chicken breasts, sauteed with green peppers, onions, anaheim peppers, and radishes. It was lightly seasoned and then fresh tomatoes were added at the end. We then ate it on a bed of green leaf lettuce and garnished it with cilantro, lime, and avacados.
This was strictly Paleo!

Thursday
On Thursday, we had breakfast burritos. Not paleo! The tortillas were store bought and white flour, the kind you cook yourself so there are no hydrogenated oils. Like I said about the rice, the closer it is to its natural state the better it is for you. So wheat anything is always better for you, unless they put hydrogenated oils in it, now they've just added a toxin. But inside of the tortillas, we had potatoes, onions, peppers, sausage, scrambled eggs and cheese. Yummy!!
For dinner we finally ate true paleo, and mom thought it was delicious! We had baked chicken breasts, sliced tomatoes and avacados, and mixed vegetables. You should always balance your meals with a carbohydrate and protein. Healthy carbohydrates are vegetables, especially greens. Adding a healthy fat can be good too. In this case we had avacados. Often, our family adds potatoes or sweet potatoes or on a rare occasion we may have brown rice.

Dinner in a hurry!
On Wednesday we were in a hurry! And did not have time to cook a full on meal. Wednesdays for us are pretty busy so my mom planned ahead and bottled lots of soups and other canned items, like chicken, potatoes, vegetables, etc. So we grabbed one bottle of vegetable bean soup and two bottles of chicken chunks and started cooking.
Mom cleaned out the fridge of leftovers and added them to the soup. We added a half bottle of homemade chicken soup, a container of chicken gravy from Thanksgiving, a tupperware dish of peas and corn, and some cooked butternut squash diced up. Voila!! The fridge was cleaned out and dinner was ready!
